Wagyu is renowned for its fine marbling and high ratio of intramuscular fat, which gives it the rich flavour and buttery texture it is known for.
Our Wagyu Gold is sired by British bred, fullblood, Japanese Black Wagyu. These bulls are in the top 1% of the Wagyu breed globally for marbling and marble fineness which, coupled with our unique production methods, guarantees a superior taste experience.
The fat profile of our Wagyu Gold is unique.
We have put a great deal of precision into our production processes, both genetic and nutritional, to ensure that our fatty acid composition results in a delicious premium quality product, underpinned by superior tenderness, marbling and texture.
As such we offer a naturally soft, pale and tender Wagyu with a lower melting point that cooks easier for a more consistent eating experience. Our Wagyu is also a healthier option, high in antioxidants, that is more easily digested.
Our integrated supply chain ensures Wagyu Gold cattle are exclusively reared, grown and finished at specialised high welfare farms linked by Farm Assurance. These farms are within close proximity of each other and our processing facility, which ensures the highest welfare standards and a trusted supply chain.
The supply chain that underpins our Wagyu Gold is a circular supply chain, targeting high performing dairy suppliers for calf supply. Cattle are processed at our state of the art facility in Telford, where an AD plant uses plant waste to create electricity as well as fertiliser, which is spread on farmland to grow the barely and straw that the cattle are finished on.
